This month sees Wahaca bringing a vibrant taste of summer to its restaurants with the launch of an all-new menu of seasonal dishes and sunshine-ready drinks. Inspired by the bold flavours, colour and energy of Mexico, the new line-up has been created with laid-back summer dining and al fresco catch-ups very much in mind – and is available now at Wahaca’s restaurants across the UK.


Seasonal Specials, Spritzes and Sunshine Bowls

Seafood fans will savour the Yellowfin Tuna Tostadas (£10.50), with sustainably-sourced raw tuna marinated in soy and lime with avocado, tomato salsa and salsa macha, layered onto crisp tortillas for a fresh, textural dish ideal for warmer days. For a beautifully balanced, plant-based plate, look no further than the Chipotle Glazed Aubergine (£7.75): roasted aubergine served with rich macadamia mole, jalapeño oil and crumbled feta, balancing smoky depth with fresh, lively flavour.

Making a welcome return to the specials menu in new and improved form are Crispy Potato Esquites (£7.95) – roasted Jersey Royals topped with corn, jalapeño mayo, crema and grated Parmesan-style cheese. Joining them are marvellously more-ish Hibiscus Glazed Chicken Wings (£9.25) served with crispy onions, pickled vegetables and toasted sesame – just the ticket for sharing in the sun.

Alongside the new dishes, Wahaca’s much-loved Sunshine Bowls (from £13.95) have also been refreshed for the summer season. Packed with 30 plants, the vibrant bowls combine avocado, corn and bean salsa, cherry tomatoes, quinoa, rocket and agave chipotle dressing, with a choice of grilled chicken, ‘Halloumi Al Pastor’ or garlic sweet potato.

To perfectly pair with the new dishes, Wahaca is also introducing a new collection of Spritz Specials inspired by the bright, fruit-forward flavours of the season.

The Wahaca Spritz (£10.95) blends Aperol, 100% agave tequila, grapefruit and Prosecco for a citrus-led take on the classic serve, while the Frida Spritz (£10.95) combines white rum, pink grapefruit, Prosecco, lemon and vanilla notes – inspired by the colourfulness and complexity of Frida Kahlo’s artwork.

The Jalapeño & Cucumber Spritz (£9.95) delivers a fresher, lightly spiced profile with gin, muddled jalapeño, cucumber, elderflower and Prosecco, while the Sarti Spritz (£9.95) brings together Sarti Rosa liqueur with blood orange, mango and passion fruit. For a non-alcoholic option, the Three Citrus Spritz (£5.95) combines pink grapefruit, lime and lemon with mint and bubbles for a bright, refreshing alternative.
