Came across this fist sized Chicken Of The Woods on our walk today. This is the perfect time to harvest – when it’s young. We do enjoy foraging but, on this occasion, I felt the world would be better with this particular fungi left in it.
Lovely sautéed with garlic and butter, or perhaps a little Thyme. You can add a dash of cream to the pan, butter, salt and black pepper. Jolly nice it is too.
